So I am starting this blog for me. If it's helpful for you, the more the merrier! Why am I doing this? Well, to explain that, I have to get really real with you.

My husband and I have been married for nearly six (6) years. For five (5) of those years we have been trying to have children with no success. We have not been able to know much about why as we could not afford to see a fertility specialist until recently. In working with this specialist we found out that my hypothyroidism is more out of whack than was thought with my regular physician. Through testing, we found out that I have Hashimoto's Disease. Hashimoto's disease is where your body attacks your thyroid because it thinks the thyroid is not supposed to be there. This is the cause for my hypothyroidism. The specialist that I am working with recommended that I go gluten free to combat the effects of the disease. I did do my research and found that going gluten free is something many people with hashimoto's disease do, but there is no evidence that it helps. Well, no harm in trying to see if it works for me is it?

The reasons for going dairy free is simple: any doctors you talk to about fertility will recommend you limit your dairy intake or remove it completely from your diet. An example of where you see this is Taking Charge of Your Fertility by Toni Weschler and The Fertility Diet by Jorge Chavarro and Walter C. Willett. In both of these books, it recommends to limit ones dairy intake and to focus on full fat dairy. When I spoke with my specialist about this, I also told her that my allergies have always been bothering me. I usually get sick at least once a month from swallowing mucus in my sleep. After telling her about this, she told me that removing dairy from my diet would greatly enhance my quality of life and she wasn't wrong! Since I removed dairy from my diet, I have only gotten sick once and that was because I had dairy every day for a week when I was helping a friend with a family emergency.

I have been dairy free for going on four (4) months now. I started my gluten free journey at the start of the new year. I have been keeping the cooking to a minimum, having a lot of allergy friendly takeout or buying premade allergy friendly things like gluten free corn dogs that are also dairy free. I want to do more though. My parents have shown me that I can! After we told them about the changes to my diet, they have gone out of their way, above and beyond to meet my needs. They've researched gluten free bread recipes and any time we go to their house for Sunday dinner, they always have something new that is allergy friendly and delicious. I gives me strength to know that I can do it in my home too.

That brings us to why I am here. I love to cook and have quite the collection of recipes, most of which don't meet with my dietary needs. So, I need to change them! I am going to post here how it goes. My successes. My failures. My husband's verdict. Opinions of friends. I hope that you will enjoy taking this journey with me. This journey is about meeting a goal at the end, but the journey is what helps get you there.
